Espresso is a grind problem first. Particle size and consistency decide whether a $500 machine tastes sour or sweet — the boiler just holds the water.

What the machine cannot fix
A machine can hold temperature and apply pressure. It cannot un-bimodal a blade grind or invent fines a stepped grinder skipped. If the puck is a mix of boulders and dust, water finds the easy path. That is channeling — sour and bitter in the same cup — and no “PID upgrade” on a mediocre grind will hide it.
The first grinder that is actually espresso
Baratza Encore ESP exists because the regular Encore was a brew grinder with an espresso rumor. The ESP’s finer range is the budget line we will put on a shortlist. Above that, DF64-class flats if you single-dose, Eureka Specialita if you want a quiet hopper.
When to upgrade the grinder, not the machine
If you already own a Classic, a Bambino, or anything with a real portafilter, and you are still on a grocery-store blade or a press-pot burr, stop shopping machines. The quiz is built to say this out loud. An upgrade path that ignores grind is just a more expensive way to pull the same shot.
