The point
Espresso grind is finer than drip — but “as fine as dust” is how beginners choke the machine. You’re aiming for a setting that yields a controlled shot time and taste, then nudging finer or coarser in small steps. The grinder matters more than the chrome on the group head.
Where to start
Use a capable espresso-range grinder. Blade grinders and many drip burrs can’t hold the fine end consistently — the beginner kit and the gear quiz cover that logic. Pick a documented starting dose for your basket (often about 16–20 g for doubles; follow your basket notes). Start mid-fine in the espresso zone, not at the finest stop. Purge a little coffee after big dial changes. Pull a shot and watch time and flow. Many home baselines chase roughly 25–35 seconds from pump-on for about a 1:2 brew ratio — a teaching window, not a law. Taste wins. Adjust one variable. Too fast or sour-thin: finer, or a slightly larger dose. Too slow, harsh, or choking: coarser, or a slightly smaller dose. Change grind or dose, not both in the same breath. Log bean, dose, grind mark, time, out-weight, and taste. Fresh beans drift as they degas.
What fine enough feels like
The grind looks like flour with a little grit — not powdered sugar, not drip sand. The puck resists evenly; no volcano channel from a cratered bed. Distribution and a light tamp matter. Grind will not fix a jagged bed.
Common beginner traps
Starting at the finest setting: back off, and work finer only as needed. Changing grind, dose, and temperature together: one change per shot. Stale beans blamed on the grind: use freshly roasted coffee and note the roast date. A cheap grinder that jumps settings: upgrade the grinder before the machine.
